Intentionally Gluten Free

I've never made anything in my kitchen (on purpose) that has been gluten free.  Yeah, I make things like fudge or rice and beans that are inherently sans gluten.  Last night was a first.  It was fun.  It was successful.  It was tasty.  I would imagine a lot of things could go wrong, or that there are a lot of recipes out there that have no flavor or don't actually work like they are supposed to, but I guess I got lucky and found two quality recipes.

Cauliflower Pizza Crust
I had seen this on pinterest and blogs here and there, but had never made it before.  We LOVED it!  It was a little salty tasting, but I think that was because I used Parmesan cheese.  Stay far away from this recipe if you have any issues with cheese...
Chocolate Chip Cookies
So, I've had garbanzo bean four in my fridge for over 2 months now that I have been just dying to use up.  This was perfect!  The batter had a little bit of a funky taste so we were worried that they might not be great.  I still served them to our friends and hoped for the best.  As it turned out, they were great.  They taste very similar to the toll house chocolate chip recipe, except that I can totally notice that it was made with only brown sugar.  Although that's not a bad thing in my book.  I can't wait to let my gluten free friends try these out. This might be a recipe that will come in handy during the summer when trying to make the gluten free campers feel at home.

  2. I'm pretty sure I picked up the garbanzo flour at the grocery store, but I want to look into grinding my own.
